3 New Quick Fit Recipes: Cranberry Orange Coconut Muffins, Protein Noodles & More

I have been getting more & more inquiries lately about various types of proteins, particularly Pea protein, Soy & Whey. My wife has been exploring the various options as well via recipes with various protein types, partly for herself but also for those of you who have been asking lately. This recipe is just one of her first attempts at manipulating one of the handful of pea protein noodle options she found via various search engines.

Protein Pasta (2-4 servings)

Ingredients:
  • 1/2 cup pea protein powder (plus some for dusting)
  • 1/4 cup almond flour
  • 1/4 cup chickpea flour
  • 3 large eggs
  • 1 tsp olive oil
  • pinch of xanthan gum
Directions:
  • Mix eggs in with a bowl.
  • In a food processor, mix dry ingredients and then add egg mixture and olive oil.
  • Add water as needed, tablespoon by tablespoon.
  • Knead together for 2-3 minutes.
  • Wrap dough in plastic wrap and allow to sit for 30 minutes at room temp.
  • Remove dough from plastic and roll out to about the thickness of a dime with a rolling pin.
  • Using a sharp knife or cookie cutter, slice into thin ribbons. Dust with pea protein as needed.
  • Place cut pasta on a lint free, clean towel for 15-20 minutes to dry.
  • Bring a large pot of generously salted water to a rolling boil.
  • Add the pasta and cook for 15-20 mins, stir occasionally so the noodles don't stick together.
  • Drain or remove with a slotted spoon
  • Enjoy them while they're hot

Chocolate Protein Browni

The other posts we've had before for chocolate protein brownies, protein brownies, and fudge protein brownies have been kind of "hit & miss." Meaning there have been a few of you that tried them & absolutely loved them, but there have also been a few of you that have tried them and even tried modifying a few of the details-yet they still didn't turn out well. So I had my wife sit send me a different option for putting them together with a tad more taste and should hopefully yield more consistency. If you give these a try PLEASE comment back & let us know how it went!
